Kitchen Sink Cookies {No-Bakes!}

2 cups sugar

1/2 cup cocoa

1 stick real butter (1/2 cup)

2/3 cup milk

1 cup peanut butter

1 teaspoon vanilla

3 cups uncooked oatmeal (old fashioned or quick-cooking)

1 heaping cup raisins (I used 6 of those little 1-oz. boxes)

1 cup chopped nuts* (I used half almonds and half peanuts)

1 cup sweetened flaked coconut (optional)

Waxed paper

Combine sugar, cocoa, butter and milk in a large saucepan. Bring to a boil over medium-high heat; stirring constantly. Once mixture reaches a boil, continue cooking for one full minute. Remove from heat immediately.

Add peanut butter and vanilla; stir well. Add oatmeal, raisins, nuts and coconut and stir until thoroughly incorporated. On a sheet of waxed paper, drop mixture by rounded teaspoonfuls (I use a cookie scoop). Cool several hours until set and firm.

*if using unsalted nuts, add a pinch of salt when you add the nuts
