Holiday Cranberry Salad
1 3-oz. box raspberry gelatin
1 cup boiling water
3/4 cup sugar
1 tablespoon lemon juice
1 8-oz. can crushed pineapple with juice
3-4 cups frozen cranberries
1/2 cup finely diced celery
1/2 cup finely chopped walnuts

Combine gelatin and boiling water in a medium bowl and stir to dissolve gelatin.  Add sugar and lemon juice and stir until sugar is dissolved. Add pineapple and juice.

Using a food processor or hand-held food chopper, chop frozen cranberries until uniform in size with the chopped walnuts and celery (cranberries must be frozen to chop properly).  Process or chop enough cranberries to measure two cups of chopped cranberries.

Add two cups chopped cranberries, celery and walnuts to mixture and stir to combine. Pour into a gelatin mold or glass serving dish. Cover and refrigerate several hours or until set.
