Easy Chicken Caesar Salad

2 large (or 3 small) boneless, skinless chicken breasts

3 tablespoons olive oil

1 tablespoon oregano

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon pepper

1 family size Caesar salad kit (or 2 small ones)


Cut chicken breasts into thin strips (about 1/2 inch wide). Add chicken, olive oil, oregano, garlic, salt and pepper to a zip-top bag. Seal bag and “massage” the chicken around a bit to evenly distribute the seasonings. Marinate chicken in the refrigerator 6-10 hours. Marinating is optional, I’m sure the chicken would be just as lovely seasoned just before cooking.


Heat a large skillet over medium-high heat. Add half of chicken strips to hot skillet and sauté until lightly browned; set aside. Cook the remaining chicken; set aside as well.


Assemble salad per manufacturer’s instructions and place on serving plates. Top salad with chicken and serve.


I was able to make 2 adult and 2 child-sized salads from this recipe. Adjust recipe for your family as needed.
