Cake Mix Cookies

1 box chocolate cake mix (I used Duncan Hines Dark Chocolate Fudge)

2 eggs

1/2 cup vegetable oil

1 1/2 cups chocolate chips (I used 1 9-oz. bag of Nestle Toll House DelightFulls)

Add eggs and oil to a large bowl or stand mixer and mix well. Add dry cake mix and mix on low until well combined (about 1 minute). Stir in chocolate chips.

Refrigerate batter for 30 minutes to firm up a bit. Roll batter into 1-inch balls and place on a cookie sheet two inches apart. Bake at 350 degrees for 8-9 minutes or until set. Return the batter to the fridge between batches to make sure it doesn't get too soft.

Makes approximately 40 cookies.

You can use any flavor cake mix and any type of chips or morsels for this recipe.
