Caramel Kettle Chips

1 cup light brown sugar 

1/4 cup butter

1/4 cup light corn syrup

1 tsp vanilla extract

1/2 tsp baking soda

One bag plain, salted kettle-style potato chips

In a large, microwave proof bowl, combine the brown sugar, butter, corn syrup, and vanilla extract.  Microwave on high (100% power) for 3 minutes.  Stir well.  Return to the microwave and cook on high for an additional 2 minutes.  Remove the bowl from the microwave; stir in the baking soda followed by the potato chips.  Don't worry if the chips aren't completely coated.  Return to the microwave and cook for 2 minutes on high.  Stir well.  Return to the microwave and cook for another 2 minutes.  Spread out in an even layer on one or two cookie sheets; let cool until the caramel hardens.  Break up any chunks.  Store in an airtight container.
