Lemon Poppy Seed Muffins

Prep Time- 10 mins Cook Time- 25 mins Yield- 12 muffins 



3 Cups all-purpose flour

1 cup granulated sugar

2 ½ teaspoons baking powder

½ teaspoon salt

1 tablespoon poppy seeds

2 large eggs

1 ¼ cup milk

½ cup butter, unsalted, melted

1 tablespoon of lemon zest

Juice of one lemon


Preheat oven to 350

In a large bowl, whisk together the flour, sugar, baking powder and poppyseeds. In a separate bowl, mix together eggs, milk, melted butter, lemon zest and juice. Stir wet ingredients into dry ingredients until moistened. Spoon batter into light greased muffin tins and Bake at 350 for 25 to 30 minutes. These are best when served fresh out of the oven drizzled with a little sweet icing my grandma used to put on everything. 

Simply stir together one cup of powder sugar with 1 1/2 tablespoon of lemon juice. Drizzle over warn muffins.
