Yogurt Curry Dressing (Makes 1 1/2 cups)

Ingredients:

  • 1 1/2 cups low-fat or non-fat plain yogurt
  • 1 tsp. extra-virgin olive oil
  • 2 tbsp.  minced ginger
  • 1/3 cup chopped onion
  • 2  tsp. minced garlic
  • 2 tsp. yellow curry
  • 3/4 teaspoon coarse salt
  • 1 tsp. sugar
  • 2 tsp. fresh lemon or lime juice

 

Directions:

1) Combine ingredients. Drizzle over salad. Or refrigerate in airtight container for up to two days.
