Sauteed Kale


1 large bunch of kale

2 to 3 tablespoons olive oil

2 to 3 cloves garlic, thinly sliced

1/2 onion, diced

¾ cup chicken stock

salt and pepper


Chop stems and leaves of kale.

Heat olive oil in a large saucepan over medium-high heat.

Add garlic and onions, cook until softened. 

Over high heat, add stock and kale to saucepan with garlic and onions.  Stir to combine.  Cover and cook for 5 minutes.

Remove cover and cook for additional 10-15 minutes until all the liquid has evaporated.   Stir occasionally.

Season with salt and pepper.

Serves 2 to 4.
