Beef & Broccolini Lo Mein

adapted from, Marinated Beef and Vegetables recipe, Asian - the essential recipe collection

makes 3-4 servings


marinade

1 TBS rice vinegar

1 TBS soy sauce

2 tsp corn starch

2 tsp brown sugar

2 cloves of garlic, minced or grated

1 TBS sesame oil


1 pound of rump or strip steak

3 TBS grapeseed oil, or other high temperature cooking oil 

2 tsp grated fresh ginger root

1 bunch broccolini, chopped into 1" pieces

8oz snow peas, cut lengthwise into thin strips

8oz mushrooms, sliced

4 scallions, chopped on a diagonal

1/2 cup beef stock

1/2 TBS cornstarch

1 TBS soy sauce


8oz dry spaghetti, or noodle of choice


Whisk the marinade ingredients together in a large bowl.  

Slice steak into thin strips, against the grain, on a 45 degree angle.  

Add meat into the marinade mixture, toss to coat, cover and set aside for 15 minutes.


Cook pasta according to manufacturer's instructions, drain, set aside. 


Mix the cornstarch and soy sauce together in a small bowl, set aside


Heat 1 TBS of grapeseed oil in a large skillet or wok.  When oil is hot, swirl grated ginger in the pan for 30 seconds.  Stir-fry the steak for 2-3 minutes until medium rare - working in batches if necessary, as to not overcrowd the pan - remove from the skillet when cooked, set aside.


Heat remaining 2 TBS of grapeseed oil, stir-fry the broccolini, mushrooms, and snow peas for 2-3 minutes - this can be done in batches, as well, if needed.


Pour beef stock over all the cooked veggies, in the skillet, cover and steam for about a minute.  Stir in the reserved cooked steak and the cornstarch/soy sauce mixture, cook until the juices start to thicken.  Add in cooked noodles, tossing to coat for 2-3 minutes, or until the noodles have absorbed the liquids.  


Top with chopped scallions when serving.
