Low cal Hearty Italian Stew

  • 150 g (half pack), Cooked & Peeled King Prawns (185g pack)
  • 300.00 g, Potato
  • 1 medium Onion - diced
  • 2 Fresh Celery Sticks
  • 2 tsp, Spices, paprika
  • 1 container (136 gs ea.), Tinned Chopped Tomatoes
  • 1 Cube (10g), Vegetable Stock Cubes
  • 6.00 g, Parsley, fresh
  • 2 clove, Garlic Clove
  • 2 cup, Spinach - Raw
  • 1 cup, pieces or slices, Mushrooms, white, raw
  • 200 grams, Fish Pie Mix

The How to Bit

  1. Peel, halve and chop the onion.
  2. Wash and slice the celery.
  3. Sauté the onion and celery in the olive oil in a pan for 2 minutes.
  4. Cut the potatoes in half, or quarters if they’re big. Add them to the pan and sauté for another 3 minutes.
  5. Peel and mince the garlic and add to the pan.
  6. Add the tinned tomatoes, Italian seasoning and vegetable stock, season with some salt and black pepper. Bring to the boil, then cover and simmer for about 15 minutes, until the potatoes are tender.
  7. Add the fish mix and cook for 5 minutes, then add the prawns and the spinach and cook another 5 minutes.
  8. Serve topped with the chopped parsley.
