Tummy Warming Beef casserole

Tummy Warming Beef Casserole ( feeds 4 )

Ingredients 

  • 400g Diced steak pieces - usually €4.00 reduced to €2.00 in Supervalu
  • One Diced Onion  from the 2 for 1 euro deal - Supervalu
  • Red Pepper cubed from the 2 for 2 euro deal - Supervalu
  • Mushrooms 49c from Aldi
  • 1 Beef Stock cubes -from my store cupboard ( I usually get them when there is a deal on)
  • 2 tbsp Tomato Paste - 49c Aldi
  • 2 tsp Paprika again in my store cupboard but cheaply available from both supermarkets 75c
  • 2 cloves Garlic 99c
  • One Tin Of Mixed beans ( optional)  - 49c Aldi
  • Olive Oil - store cupboard 
  • Cornflour

THE HOW TO BIT  

  1. In a pan brown the steak in a little olive oil with the onion, as it browns add in the garlic, I do this so the garlic doesn't burn .
  2. Add in the mushrooms, peppers and the mixed beans to the pan and keep on a medium heat and stir.
  3. In a jug make up a pint of beef stock and add in the tomato paste and 2tsp of paprika and mix in 2 tsp of cornflour to thicken. I do this by adding a bit of beef stock to the cornflour in a small bowl and then once it is a runny paste, pour it into the rest of the stock.
  4. I add the stock into the pan and then I pop the whole lot into my slow cooker for 4-6 hours.
  5. Now if you don't have a slow cooker or have the time you could pop it all in a casserole dish in the oven at 180 C / 350 F or Gas Mark 4 for 25 minutes.
