Slow-cooker Beef, chestnut mushroom and Redcurrant Casserole

Ingredients

  • Beef Pieces
  • 1 Onion -diced
  • 3 carrots peeled and sliced
  • Chestnut mushrooms
  • Red Pepper
  • 2 cloves Garlic -crushed
  • Beef stock
  • Redcurrant Jelly
  • 1 tsp sage
  • 1/2 tsp parsley
  • 1/2 thyme

The How to Bit

  1. Put the onion in a pan and caramelize
  2. Add the beef pieces and the garlic and brown
  3. Finally add the mushrooms, carrot and pepper and sweat in pan
  4. Make 2 pints of Beef stock and add to this two dessert spoons of redcurrant jelly and the herbs
  5. Add everything to the Slow-cooker and mix and cook for 4 hours on High or 6 - 8 hours on Low
  6. Serve with creamy mashed potatoes
