"Fried" chicken with Cheesy nacho crumb - gluten free


1 pound mini chicken breasts

1/2 teaspoon salt

1/4 teaspoon pepper

1/3 Gluten free flour

2 large eggs

2 garlic cloves, pressed

Vegetable cooking spray

2 cups crushed cheesy corn tortilla chips - make sure they are corn chips if you want this recipe gluten free

The How to Bit

  1. Have three bowls ready, a lined baking tray and the oven pre-heated at 200°C or 400° F
  2. Mix the flour and the salt and pepper in one bowl
  3. in another bowl mix, the whisked the egg with the garlic
  4. In the third bowl have the crushed Cheesy Nacho Chips
  5. Dip the chicken in the flour - shake off the excess. Then wash them in the egg and finally the nachos
  6. Place on the baking tray and cook for 18 - 20 minutes or until golden
