Zucchini Bread 1


3 eggs

1 cup vegetable oil

2 cups sugar

2 cups zucchini, grated and well drained

1 tsp. vanilla

3 cups flour

½ tsp. salt

¼ tsp. baking powder

1 tsp. baking soda

¾ tsp. nutmeg, fresh grated is best

1 Tbs. cinnamon

½ cup raisons (optional)




  1. mix together eggs, oil, sugar, zucchini, and vanilla; set aside.
  2. mix together flour, baking powder, soda, nutmeg and cinnamon; add to the first mixture, mix well. Add raisons if using.
  3. Pour into 2 greased and flowered loaf pans, I used bakers secret. Bake or do on the smoker at 350 deg. F for approximately 45 to 50 minutes or until the center springs back when touched.


Notes: I did mine on my Traeger at 325 deg F. I drained the zucchini a half hour and squeezed some of the water out. Leave the skin on the zucchini for some nice green specks. I did not add the raisons. Best with some butter on top!
