White Chick Chili

White Chicken Chili CP Neely’s

I have made a lot of white chicken chili and this is a favorite recipe. I got help from the Neely’s of Food Network. I changed it up and made it pretty mild, my wife like dit and the grandson ate a big bowl. You can use any cooked chicken, I used a 15 oz. Can from a local butcher that is good. I just used one can of cannelini beans for a more soupy mix, use two if you want it thicker.

1 to 1 ½ lbs cooked chicken, chopped small

1 quart chicken broth

1 to 2 cans white beans, I like cannelini

1 - 4 oz can mild green peppers

1 sweet onion chopped

1 TBS chili powder, heat to suite

1 tsp ground cumin

1 TBS ground coriander

garlic to taste

juice of one lime

Add some of the chicken broth & onion to the crockpot and cook on high for about 20 minutes. Add in the chicken and all the other ingredients. Cook on high for three hours.

Serve with lime wedges, shredded cheese and sour cream. A good crusty bread goes well with it.
