Unskewered Beef & Veggie Kabobs

I always have trouble keeping everything on a skewer so I will do these in a grilling basket from Pampered Chef.

 

Marinade:

1/3 cup olive oil

1/3 cup red wine vinegar

2 Tbs. ketchup

4 cloves garlic

1 Tbs. Worcestershire sauce

Fresh thinly sliced basil (chiffanade)

1 tsp. oregano

Salt & pepper to taste

 

1 to 1 1/2  lbs sirloin beef cut in chunks

 

Veggies:

1 Yellow squash cut in chunks

1 to 2 Tomatoes cut in chunks or cherry tomatoes

½ lb baby bella mushrooms (Cremini)

1 Vidalia onions cut in wedges

1 large green pepper cut in 1” pieces

 

Mix marinade ingredients, use half for the beef & half for the veggies, placed in plastic bag & marinate in the fridge at least 4 hrs. Pour off marinade from the beef & discard, save marinade from the veggies to baste while grilling.

Grill as you prefer. I did mine low & slow not typical compared to most ways to grill kabobs. I did on my Treager at 350 grill temp for 15 min, stirred, & basted then another 15 min. Sirloin was melt in your mouth & veggies were slightly crispy.

Good served over rice.
