Spice rubbed cowboy chops


1.5 Tbs smoked paprika

1 Tbs chipotle or ancho chili powder

1 Tbs brown sugar

2 tsp unsweetened cocoa powder

1.5 tsp garlic salt

1 tsp ground coriander

½ tsp cumin

½ tsp cinnamon

Salt & pepper to taste


I found this recipe at choosy-beggars.com. The photos on the site looked good the rub sounded like something different and what I might like. I used ancho chili powder if you want hotter use the chipotle. I didn’t add any salt & pepper since I had brined the chops overnight. For the brine I used ½ gallon of water, 1/3 cup of kosher salt and 2 Tbs. molasses.


I smoked mine on my Traeger grill, my bone in pork chops were about ¾ inch thick. About a half hour before going on the smoker I took them out of the brine and rinsed well.  Dusted well with the rub.


I did them on smoke mode 170 deg. for a half hour then taking about 10 minutes to ease the temp up to 300 deg. I do this to keep from getting a large overshoot getting to 300 deg. on the Traeger. I did them for another half hour and they were up to 150 deg. IT. They were just right and fork tender.
