Smoked Sausage Cabbage & Potato Soup

1 lb smoked sausage

1 quart Chicken broth

½ bottle dark beer

¾ med head cabbage, shredded or cut to desired size

1 med onion, chopped

2 to 3 stalks celery, chopped

1 large carrot or several small, chopped

2 cloves garlic, fine chop

4 med potatoes, diced

2 tsp smoked paprika

½ tsp thyme

1 bay leaf

Salt & pepper to taste

Olive oil

Water if needed


If smoking your own sausage, I used 1 lb of fresh sausage from my butcher. Smoked at 175 for one hour, 225 another hour, then 300 deg for 15 min. Let cool slightly then slice to 3/8 inch. Heat a little olive oil in a large stock pot on med high. Add sausage & brown until getting some brown sticking to the bottom of the pot. Add the chopped onion, garlic, celery, & carrots, cook until getting soft, add smoked paprika and salt & pepper, add the ½ beer & deglaze the pan. If you don’t use beer just use water or broth, ½ pint. Reduce down some, then add the broth. Bring to a boil, add the cabbage, diced potatoes, thyme & bay leaf. Add water if needed, I used a pint. Return to a boil, reduce to a simmer, cover & cook for two hours. Serve with some good crusty bread & butter. Enjoy.


Note: A good option would be to add a 14 oz. can of fire roasted tomatoes. I forgot to add it!
