Smoked Apple Tart

6 medium apples (I used two sweet varities)
½ cup sugar
1 ½ tsp.vanilla
generous pinch of salt
2 tsp cinnamon
½ tsp freshly grated nutmeg
1 Tbsp freshly squeezed lemon juice
1/3 cup water, plus more if needed

1 home made or store bought pie crust

Shredded sharp cheddar cheese

1. Core and chop apples into ½ inch pieces (leave skin on). Toss in fresh lemon juice.


2. Combine first 8 ingredients in a heavy bottomed saucepan and bring to a boil. Cover with a parchment round, turn down the heat and simmer, stirring occasionally, until apples are tender and compote is thickened. This will take about 45 min. to one hour.


3. Place the crust in a tart pan, pierce bottom with a fork. Place some shredded cheddar on top of the crust & press in with your hand. Spoon apple mix over it & top with some more shredded cheddar.


4 Place in a smoker set on smoke mode, 170 to 180 deg. for ½ hour. Turn smoker to 325 to 350 deg & bake until crust id browned about 20 to 30 min.
