Nicks Sicilian sausage patties

 

1 pound of pork sausage

1 tsp. paprika

1 rounded tsp. Italian sausage seasoning, I used Penzey’s

½ tsp. thyme

1 rounded tsp. each of dried garlic and onion flakes, I used Penzey’s

2 TBS. red wine vinegar or Chianti wine

2 TBS. crushed red pepper

 

Mix all together well and then in the fridge a few hours before making the patties. Divide the mixture into 3 patties and in the fridge an hour or two. Grill the patties your favorite way.

 

This is my version of Nick’s Sicilian sausage. Not quite as good but close. Even though the Italian sausage seasoning had fennel in it the next time I will add some whole fennel seeds.
