Scallys Mac n Cheese

 

8 oz. elbow pasta

2 cups shredded cheese; aged cheddar and gouda 1 cup of each or sharp cheddar and grueyer

Heavy cream or half and half

Chicken stock about a half cup

1 shallot sliced thin or some dried shallots

2 Tbs. butter

2 Tbs. flour

1 to 2 Tsp. Smoked paprika

Fresh grated nutmeg

 

Bacon and Panko bread crumbs for topping

Cut 3 to 4 slices of bacon thin and brown or fry strips and crumble

 

Cook pasta just until firm. Melt the butter in a sauce pan on med. high heat, add flour and stir until thick. Slowly add in about a half cup of chicken stock stirring. Add the shallots, smoked paprika and nutmeg. Stir in enough cream to make a nice white sauce. You can also take this to a brown sauce if you like. Add in the cheeses and add in the drained pasta; stir until mixed well.

 

Pour mix into a buttered or oiled casserole dish you can cover. Sprinkle the bacon and Panko bread crumbs over the top. If you like it set up bake as is or my wife like sit thinner so I added a half cup more of half and half.

 

Bake in a preheated 360 deg. oven. 25 minutes covered then remove the cover and bake another 25 minutes.
