My Salsa Meatloaf


2 lbs. Ground beef, I use a lb. of ground round and a lb of ground pork

1/3 cup salsa, I used Newman's Own mild

¼ cup milk

1 beaten egg

¼ cup Panko bread crumbs

salt and pepper to taste

½ cup shredded cheese. I used 4 blend Mexican

Optional would be some chopped onions and green chilies.


Mix all together and form a loaf. I like to let mine set up in the fridge for a couple of hours before baking. I did mine on my Traeger pellet smoker, preheated at 200 deg. For a half hour of smoke and then went to 290-300 deg. Grill level to finish to 160 deg. IT. It took an hour and 50 minutes. For a conventional oven I would say bake at 350 deg. For an hour and half.
