Reames Chicken & Dumplings

2 TBS oil

12 oz Chicken breasts cut in bite size

½ cup chopped onions

1 quart chicken broth

½ cup diced celery

1 TBS parsley flakes

Pepper to taste

1 Bag Reames frozen flat dumplings

2 cups frozen peas & carrots


In a large pot sauté the chicken & onions until chicken is slightly browned. That’s if you are using raw chicken, I smoked my chicken so added it later. You could also use rotisserie chicken. I sautéed my onions, celery, & carrots and sprinkled in some Wondra flour before adding the broth.


Add the broth, celery, pepper, & bring to a boil. I also added some chicken soup base. If using precooked chicken add it here & cook awhile.


Add the Reames dumplings & return to a boil, reduce heat & simmer for a half hour. Add the peas & carrots. I just added the peas since I used fresh carrots, cook another 10 minutes. This is great served over mashed potatoes.
