Pesto, Pasta and Sausage

Parmesan Fettuccine with basil & chive pesto



1 cup basil leaves

1 cup chives

2 garlic cloves

¼ cup roasted pumpkin seeds (papitas)

Salt & pepper to taste

About 1 cup ELOO, extra light olive oil


Place first 5 ingredients in a blender or food processor and pulse to chop up, drizzle in the olive oil & blend until the right consistency.



¾ to 1 lb. fettuccine

About ½ cup grated parmesan

¼ cup cooking liquid from the pasta.


Sausage peppers & onions

1 lb. Italian sausage

1 large green pepper sliced thin

1 large sweet onion, sliced thin


You can just prepare the pesto & pasta or as I did made some Italian sausage, peppers and onions for a side or topping for the pasta.


If you are doing the sausage have a pot of water ready to cook the pasta. Brown up the sausage, I used Bob Evans bulk, with a little olive oil in a skillet. I left it in medium chunks. Remove the sausage, add the peppers and cook until getting a little brown. Add the sausage back, stir and turn to low heat.


Get your pot of water boiling, I always add a drizzle of olive oil & salt to the water. When the pasta is done save ¼ cup of the liquid and drain, add back to the pan. Stir in the parmesan add the pasta water and a little cream. Serve with some good crusty bread.


You can serve this several ways for different tastes. My wife had the pasta with the sausage, peppers & onions over top, no pesto. My son & I had pasta with pesto and the sausage on the side. My grandson had the pasta, no pesto and sausage on the side. My veggie daughter-in-law had pasta with pesto and sliced tomatoes on the side. Everyone was Happy!
