Penzey's Lemon Pepper Chicken

3 skinless, boneless breast halves

Juice of one lemon

Penzey’s Florida seasoned pepper

Bacon strips to wrap

 

Marinade chicken in the lemon juice for 1 to 2 hrs.

Remove from the marinade & wipe dry.

Season both sides with Penzey’s  Florida seasoned pepper, it is

hand-mixed from: Tellicherry black pepper, lemon peel, orange peel, citric acid, garlic and onion. This is what makes this dish.

Wrap bacon around each breast & secure with toothpicks. My bacon was not going to wrap good so I put a slice on the bottom & one on top & secured with silicon elastic bands.

I did mine on my Traeger on smoke mode, 180 deg for 45 min. IT was 108 deg then.

I turned smoker to 300 deg & it took another half hour to get to 168 deg IT

Turned out good, a little smoke flavor & moist.
