Meatloaf with veggies

 

1 pound of ground beef, I used chuck

½ pound of pork sausage

¼ cup of ketchup

¼ cup half and half

1 rounded teaspoon Dijon mustard

9 saltine crackers, fine crush

1 egg

1/3 cup shredded carrots

1/3 cup small diced celery

¼ cup chopped onion or more to taste

About a teaspoon seasoning salt, I used Penzey’s sandwich sprinkle

Some Savor Super Pig for on top

 

Mix all together well and form into a loaf then sprinkle some Super Pig on top. I like to let mine set in the fridge at least 2 hours before cooking. Cook your favorite way to and IT of 160 deg.

 

Savor’s Super Pig is sweet with heat and you could use any good BBQ rub
