Meatball Recipe

My recipe for MOINKS or Meatballs

Recipe adapted from CTownfishermans


1 lb. ground beef

1 lb. ground sausage

1 egg beat w/some milk, about 1/8 cup

½ cup Panko bread crumbs

½ cup shredded parmesan cheese

1/3 cup ketchup or favorite BBQ sauce

1 Tbs. dried parsley flakes

1 Tbs. Worcestershire

1 Tbs. granulated onion

1 Tbs. granulated garlic

3 Tbs. Weber’s Gourmet Burger Seasoning


Mix all together & form into the size of meatballs you want. For MOINKS wrap with a slice of bacon and a square of cheese in the middle is an option. Smoke your favorite method until bacon is crisp & 150 deg IT. Also for MOINKS I would use BBQ sauce, I did mine for spaghetti & meatballs so used ketchup. This batch made 9 large 2 ½ inch diameter meatballs. I did them on smoke 180 deg for ½ hour using my Weber grill pan then went to 300 deg for another ½ hour. Then into a preheated cast iron skillet, sprayed w/olive oil, pour your favorite spaghetti sauce over and back on the smoker for another ½ hour.
