Jiffy corn pudding

  • 1 (15 1/4-ounce) can whole kernel corn, drained
  • 1 (14 3/4-ounce) can cream-style corn
  • 1 (8-ounce) package corn muffin mix (recommended: Jiffy)
  • 2 eggs, neaten
  • 1 cup sour cream
  • 1 stick butter, melted
  • You can also top with some crushed crackers

Mix all together and pour into a lightly greased casserole dish. Bake in a 350 deg. oven uncovered for 50 to 60 minutes until light brown around the edges.
