My Chicken Divan

 

1 ½ to 2 lbs. chicken breasts, cooked

2 10 oz pkgs frozen broccoli spears, cooked

1 8 oz pkg cream cheese

2 cups milk

1 tsp garlic powder

Salt to taste

2/3 cup grated parmesan cheese

4 to 6 slices bacon cooked (optional)

 

Cook the chicken however you like; cut in slices or shred.  Cook broccoli & drain. Place broccoli in buttered casserole dish. Heat cream cheese, milk, garlic, & salt in sauce pan, stir until smooth. Pour 1 cup of the sauce over the broccoli, sprinkle w/half the cheese. Place the chicken on top. Pour 1 more cup of sauce over chicken. Bake at 350 deg for 25 min.

 

Pour remaining sauce over top & rest of the cheese. Broil until cheese is melted, let stand 10 min. before serving. If you use fresh broccoli precooked to fork render.

 

Note: A good variation is to add some bacon. I smoked 2 lbs. of chicken breasts I had brined for 2 hours. I did them what would have been the skin side down with bacon on top to an IT of 150 deg. After the chicken had cooled I sliced about ¼ inch thick. Leftover chicken would work too.

 

I have used asparagus in place of broccoli and that is good.

 

You could add the crumbled bacon before going under the broiler or add before serving.
