Apple cheddar and onion tart


4 apples, I used 2 Granny Smith & 2 Fuji, unpeeled & ½ inch dice

½ cup dark brown sugar

2 Tbs. butter

¼ cup water

1 tsp. cinnamon

Fresh shaved nutmeg to taste


3 to 4 sweet onions, sliced thin

Olive oil & butter


1 pie crust

Shredded sharp cheddar to cover bottom of pie crust

1 tart pan or a pie pan will work

Cinnamon sugar for topping


Start caramelizing the onions in about 1 Tbs. of ELOO, extra light olive oil, & two pats of butter. Do this on med low & will take about 30 minutes, stirring as you go until browning up.


Dice the apples & place first 6 ingredients in a sauce pan. Bring all to a boil then lower heat and simmer with lid on about 30 minutes. Remove the lid and turn the keat back uo until the liquid gets syrupy. Let cool some.


Place pie crust in the pan & cover with some shredded sharp cheddar cheese. Press into the crust. Next place the onions in and then the apple mixture. Top with some cinnamon sugar.


Smoke on smoke mode about 175 deg. for 1 /2 hour then go to 325 deg. until the crust is getting brown; this will take 30 to 40 minutes.


I loved the tart but not sure all will like it. Onions are the dominate flavor so if you don’t like onions it would probably be good without, just add a couple more apples. I also think it could stand a little more cheddar than I used. I used about ½ cup so use at least one cup.
