Fiesta Lime Rice

 
 
You will need:
  • 1 1/2 cups cooked long grain rice
  • 3/4 cup canned black beans, rinsed and heated
  • 3/4 cup cooked mexi-corn, heated
  • 1 large tomato, diced
  • 1 large scallion, diced fine
  • 2-4 tbsp chopped cilantro¬†
  • 1 tbsp fresh squeezed lime juice
  • salt to taste
  • Directions:

    1. Cook your rice according to the package.
    2. Rinse and drain your beans and heat them.
    3. Heat your corn.
    4. Toss all ingredients into a large bowl and give it a good stir, mixing the ingredients well!
