White Chocolate Macadamia Nut Cookies~

Adapted from Allrecipes

1/2 cup butter

3/4 cup sugar

1 egg

1 teaspoon vanilla

1 1/4 cups flour

1/2 teaspoon baking soda

1/4 teaspoon salt

4 ounces white chocolate, chopped into small pieces (or 3/4 cup of white chocolate chips)

1/2 cup chopped macadamia nuts

Preheat oven to 375º.  Line two rimmed cookie sheets with parchment paper.

Cream together butter and sugar. Add egg and mix well.  Mix in vanilla. Add flour, soda and salt and mix till combined.  Stir in chocolate and nuts.

Drop by teaspoonfuls onto cookie sheets, leaving about 2 inches between cookies.  Bake for 8-10 minutes or till lightly browned.  Cool on wire racks.

Makes approximately 24.
