Wazpacho...from my sister, Mary

4 cups sweet watermelon, seeded and chopped
1 pound good tomatoes, vine-ripened or heirloom, peeled, seeded, and chopped
2 tablespoons fresh lemon or lime juice
1 tablespoon good vinegar (I used sherry)
1/2 cup diced celery
1/4 cup extra virgin olive oil
salt and freshly ground pepper to taste
a pinch of cayenne pepper

Process or puree till smooth. Chill.

Garnish with small diced watermelon, cantaloupe, peeled cucumber, chives, garlic and croutons.

Serves 4-6
