2 potatoes, baked and cooled
1/2 cup sour cream*
1/2 cup shredded cheddar cheese*
2 tablespoons cold butter, diced
1/2 teaspoon seasoning salt,* I used Morton's Nature's Seasons
the top off potatoes and remove pulp being careful not to cut through
skin. Place pulp in bowl and chop with spoon into bite sized and
smaller pieces. Add sour cream, cheese, butter and seasoning salt to
taste. Mix well.
Preheat oven to 350º. Bake till cheese is melted and potatoes are heated through.
*Exact amounts depend on size of potatoes. You can also add some cream or milk to your mixture if desired.
