Triple Ginger Cookies~

Adapted from Bon Appetit


3/4 cup (1 1/2 sticks) butter, at room temperature

1 cup brown sugar

1 egg

1/4 cup light molasses

1 1/2 teaspoons finely grated, fresh, peeled ginger

1 1/2 teaspoons ground ginger

1  teaspoon ground cinnamon

1/2 teaspoons ground cloves

2 1/2 cups flour

1/3 cup minced crystallized ginger

2 teaspoons baking soda

1/4 teaspoon salt

Sugar, for rolling dough balls


Preheat oven to 350°F.

In a large bowl, cream together butter and brown sugar until smooth. Mix in the egg and molasses. Add fresh and ground ginger, cinnamon and cloves and mix till combined. In a medium bowl, add the flour, baking soda, salt, and crystallized ginger, and whisk to combine. Stir the dry ingredients into the wet ingredients, and mix just until moistened. 

Shape dough into 1-inch balls, roll in sugar and place about 2 inches apart on a parchment-lined baking sheet. Bake 10 to 12 minutes or until lightly browned. Cool on wire racks.
