Triple Coconut Muffins~

Adapted from

2 cups flour

1/2 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

2/3 cup milk

1 egg

1/3 cup coconut oil (may substitute vegetable oil)

1/2 teaspoon coconut extract

1/4 cup flaked coconut



1/4 cup sugar

1 tablespoon butter, at room temperature

1/4 cup flaked coconut

Preheat oven to 400º.  Grease or place paper liners in 9 out of 12 spaces in a muffin tin.

In a large bowl, whisk together flour, sugar, baking powder and salt.  In another bowl, combine milk, egg, and coconut extract.  Stir coconut oil into dry ingredients, followed by the milk mixture.  Mix till just combined. Fold in coconut.

Mix together topping ingredients.  Set aside while filling muffin cups 2/3 full.  Sprinkle topping over muffin tops.

Bake about 18-20 minutes, till toothpick inserted into center comes out clean.  Cool 5 minutes, then remove to rack.  Eat while slightly warm.
