Stuffed Tomatoes~


Summer, home grown garden tomatoes, tops cut off and insides removed and reserved

1/2 an English cucumber, peeled and chopped

1/2 stalk celery, diced



Seasoning salt to taste 

Turn hollowed out tomatoes upside down onto paper toweling to drain.

Remove seeds from the flesh of the tomatoes.  Chop the flesh.  Combine all the vegetables.  Add twice as much mayo as yogurt (if making 3 tomatoes it may take about 1/2 cup mayo and 1/4 cup yogurt depending on their size).  Season to taste...start with1/8 teaspoon.

Fill hollow tomatoes with salad and refrigerate before serving.
