Strawberry Orange Bread~

Adapted from Everyday Foods


1 pint strawberries, diced

1 tablespoon Grand Marnier

1 teaspoon orange zest

1 3/4 cup flour

1 teaspoon baking soda

1/4 teaspoon baking powder

Dash of salt

5 tablespoons plus 1 teaspoon butter, at room temperature

1 cup of sugar

2 eggs

1/3 cup orange juice


Preheat oven to 350º.  Butter a loaf pan and line bottom with a piece of parchment. Set aside.


Put berries into a small sauce pan and cook for just a minute, stirring frequently.  Add zest and Grand Marnier.  Set aside while making batter.


Whisk together dry ingredients: flour, baking soda, baking powder and salt. Set aside.

With mixer, cream butter and sugar.  Add eggs and mix till light and fluffy. Mix in vanilla.


Add flour mixture alternating with orange juice, beginning and ending with flour.  Fold in strawberries.


Bake for about 1 hour or till toothpick inserted in center comes out clean.  Tent with foil if top browns too quickly.  Cool for 10 minutes, then run a knife around edge of pan and invert onto a rack. Turn right side up and cool completely.
