Spinach and Mushroom Quiche~

6 eggs
2 cups half and half
(may substitute milk for lower fat and calories)
1/2 teaspoon salt
1 1/2 cheese, shredded (I used Havarti)
1/2 cup cheddar cheese, shredded
2 green onions, sliced
8 ounces sliced mushrooms, sauteed in butter
10 ounce box of frozen chopped spinach, defrosted and squeezed dry
2 prepared pastry shells (homemade or store bought)

Preheat oven to 400º.

Whisk together eggs, half and half and salt.  Stir in the 1 1/2 cups of cheese of your choice.  Set aside.

Saute mushrooms in butter.  Set aside.

Brush bottom of crusts with softened butter.  Sprinkle crust with green onion, veggies, and cheddar.  Pour equal amounts of egg mixture into each shell.

Bake for 15 minutes at 400º.  Decrease temperature to 325º and continue baking for about 40 minutes or till knife inserted near the center comes out clean.
