Rolo Cookies~

Adapted from Danielle of Hugs & Cookies


2 sticks butter, at room temperature

1 cup brown sugar

1 cup sugar, plus extra to roll cookies

2 eggs

2 teaspoons vanilla

2 1/2 cups flour

1 teaspoon baking soda

1/4 teaspoon salt

3/4 cup cocoa powder

Rolos, unwrapped

Preheat oven to 375º.


In a mixer, beat butter and sugars till well combined (I used the paddle attachment).  Add eggs and vanilla and mix together.  Slowly add flour, soda, salt and cocoa.  Mix till well combined.  

Scoop large tablespoon full of dough and push a Rolo into the center.  Roll in your hands till the Rolo is completely covered with dough.  Roll dough ball in sugar and place on parchment lined cooking sheet.  Repeat placing about 8 dough balls on each pan.


Bake 10 minutes.  Remove and allow to cool a few minutes on pan.  Remove to cooling rack to finish cooling.
