Peppermint Ice Cream Pie~

22 Nabisco Famous Wafers (may use Oreos, just omit the sugar), crushed or processed into crumbs

1 tablespoon sugar

1/4 cup butter, melted


1 1/2 quarts Edy's Peppermint ice cream (or whatever brand is available in your locale), softened slightly by leaving out at room temperature (you won't use the whole carton)

1 jar fudge sauce


In a medium bowl, combine chocolate crumbs, sugar and butter.  Pat into a pie plate. Freeze till firm.


Scoop out ice cream into pie crust, spreading to fill.  Smooth top, leaving room for a layer of fudge.  Freeze a couple hours till firm.

Spread jar of room temperature fudge sauce over ice cream.  Return to freezer.

Use knife dipped in hot water (and dried) to cut slices.  Serve with crushed candy cane garnish and/or whipped cream if desired.

Serves 8.
