Peach Shortcakes~

Adapted from Cook's Illustrated

3-4 cups peeled, sliced peaches

1/4 cup brown sugar (or more to taste depending on sweetness of fruit)

1-2 tablespoons butter

1/2 teaspoon cinnamon, optional

2 cups flour, plus more for cutting biscuits

1/2 teaspoons salt

1 tablespoon baking powder

3 tablespoons sugar

1/2 cup (1 stick) frozen butter

1 egg

1/2 cup plus 1 tablespoon half and half

1 egg white, slightly beaten

1 tablespoon Demerara sugar (regular sugar may be substituted)

1 cup heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla
