Peach Salsa~

Adapted from Scrambled Henfruit


2 ripe peaches, diced, peeled and diced

1 tablespoon fresh lime juice

2 Roma tomatoes, peeled and diced

1 jalapeño pepper, minced

1/4 cup red bell pepper, diced

1 tablespoon yellow onion, minced

1 teaspoon fresh basil or cilantro, minced

2 teaspoons sugar or to taste

Salt and pepper to taste


Mix all ingredients.  Adjust seasonings.  Let rest for an hour before serving with chips or as an accompaniment to chicken, pork or seafood.
