Overnight Fruit Salad~

From my great-grandmother, Elizabeth Hayes Brockman

2 egg yolks

1/2 cup sugar

Juice of one lemon

1 cup whipping cream

6-8 ounces of large marshmallows, cut in half

1 can royal Anne cherries, drained

1 large can pineapple chunks,drained

1 large can mandarin oranges, drained

1-2 cans Bartlett pear chunks, drained

Fresh grapes, cut in half

Bananas, cut into slices

Any other fruit or nut of your choice...applies, dates, walnuts, etc.

In a double boiler, heat yolks, sugar and lemon juice, while constantly whisking until thick. Remove from heat and allow to cool.

In a large bowl, whip cream till soft peaks form. Fold in cooled lemon mixture, then fruit and marshmallows...reserving bananas to add the day of serving. Cover with plastic wrap, and refrigerate overnight.
