Adapted from Picky Palate
1 cup (2 sticks) butter, at room temperature
1 cup brown sugar
3/4 cup sugar
1 tablespoon vanilla
3 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 cups semi-sweet chocolate chips
1 package Double Stuff Oreos
Preheat oven to 350º. Line baking sheets with parchment. Set aside.
Cream butter and sugars till well combined. Mix in eggs and vanilla. Mix in flour, salt and baking soda till just combined. Mix in chocolate chips.
Take a generous tablespoon of dough and flatten it between your hands. Top this dough pancake with an Oreo, then another flattened piece of dough. Seal edges by pressing top and bottom dough together at sides. Remove any excess dough, and pat the edges with your fingers to smooth. Place on baking sheet leaving 2 inches of space between cookies.
Bake 9-13 minutes or till golden. Let cool for 5 minutes than transfer to cooling rack.
Makes about 2 dozen big cookies.
