Adapted from Simply Scratch
1/4 cup honey
3 tablespoons maple syrup
3 tablespoons butter
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
2 pounds cashews (I used salted and roasted...if using unsalted, add 2 teaspoons of salt)
1/4 cup sugar
Line rimmed baking sheet with aluminum foil. Preheat oven to 350º.
Melt butter with honey and maple syrup in microwave...about 45 seconds. Add vanilla and cinnamon and stir. Add cashews and mix to coat. Spread on prepared baking sheet in one layer (you may need to use two sheets).
Bake for 6 minutes. Remove from oven and toss. Return to oven and bake another 6 minutes. Remove from oven and place in a clean bowl. Allow to cool, stirring occasionally. When cool, store in an airtight jar.
