Gazpacho~

Adapted from my mom's recipe


1 pound can of tomatoes

20 ounces tomato juice

1/2 cucumber, chopped

1/4 green pepper, chopped

1/2 onion, chopped

1/4 cup champagne vinegar

1/4 cup olive oil

1/2 teaspoon Tabasco sauce

1/2 teaspoon salt

freshly ground black pepper to taste

Diced cucumbers, bell peppers, home made croûtons to garnish(sauté bread cubes in butter till browned) 


Add all ingredients, except garnishes, to blender or food processor.  Puree.  Chill.  Serve cold with diced veggies and croutons.
