1 stick of butter, at room temperature
2/3 cup minced shallots
2 tablespoons fresh thyme leaves
6-8 ears of corn
Melt 2 tablespoons of butter, then add shallots and cook till lightly browned. Cool.
Mix the rest of the butter with the thyme in a small bowl. Add shallot mixture and mix to combine. Season with salt and pepper to taste. Chill, then serve with hot sweet corn.
