Cake Donuts with Chocolate Glaze~

2 cups cake flour, sifted

3/4 cup sugar

2 teaspoons baking powder

1/4 teaspoon freshly ground nutmeg

1 teaspoon salt

3/4 cup buttermilk

2 eggs, slightly beaten

2 tablespoons butter, melted


1/2 cup semi-sweet chocolate chips

2 tablespoons butter

2 tablespoons corn syrup

2 teaspoons hot water

Cinnamon topping:

2 tablespoons butter, melted

2 tablespoons sugar

1 tablespoon cinnamon

Preheat oven to 425º. Spray donut pan with cooking spray.

Sift together flour, sugar, baking powder, nutmeg and salt.  Add buttermilk, eggs and butter. Whisk till just combined.  Fill each donut cup about 2/3 full. I used a ziplock bag with a corner snipped off to pipe the dough into the slots.

Bake 7-9 minutes or till top springs back when touched.  Cool a couple minutes, then remove to cooling rack.

Make chocolate glaze by melting chocolate chips, butter and corn syrup together in microwave using 30 second intervals, stirring frequently till smooth and melted.  Add water and stir to combine.  Dip one side of donut into chocolate glaze, allowing excess to drip off.  Return to wire rack to allow glaze to set.

For cinnamon donuts, dip one side of donut into melted butter, then into mixture of cinnamon and sugar.  Repeat on other side if desired.

Makes 12 donuts.
