6 cups wheat bran (I use a 10 ounce bag of Bob's Red Mill unprocessed miller's bran)
4 cups buttermilk
1 cup vegetable oil
1/3 cup molasses
2 2/3 cups brown sugar
2 teaspoons vanilla
4 cups flour
1 tablespoon plus 1 teaspoon baking soda
1 tablespoon plus 1 teaspoon baking powder
2 teaspoons salt
2 large carrots, shredded and microwaved 4 minutes to soften
Preheat oven to 375º. Line muffin tins with paper liners.
Mix together bran and buttermilk. Let stand for at least 10 minutes.
Beat together oil, eggs, brown sugar and vanilla. Add bran mixture and mix in. Sift together flour, baking soda, baking powder and salt and add to batter. Mix in carrots.
Fill muffin liners 3/4 full. Bake 15 to 20 minutes till tops spring back when touched with the tip of your finger. Cool slightly, then remove to wire rack to finish cooling.
Makes 48 muffins.
